Day 126 – Dulce de Leche Cupcakes

The website that today’s cupcakes come from is amazing!  On so many levels.  Not only did it give me these Dulce de Leche Cupcakes (recipe below from Confections of a Foodie Bride).  But, I learned how to make my own dulce de leche from a can of sweetened condensed milk.  AND, they have amazing tips on how to “save” your swiss buttercream.  (It’s really easy for swiss buttercream to take a turn for the worst, especially the first couple times you try it.)  They give great advice on how to fix it…advice that I’ve used more than once and been thrilled to have!

Dulce-Cupcake     Mini-Dulce

The cakes are extremely dense and a little on the dry side. They have a nice crisp on the top.  They taste a lot like a sugar cookie, which surprised me.

The dulce de leche is thick and caramel-y.  The author provides a recipe for making it at home, which I love!!  It tastes way better than the can/bottle dulce de leche.  I made mine yesterday and popped in the fridge after it cooled.

The frosting is light and fluffy.  It is a creamy, light buttercream with a very delicate dulce de leche flavor.

Together it is a very well-balanced cupcake. The flavors all complement each other, which isn’t surprising since there’s dulce de leche in all 3 parts. The cupcake could stand to be a little lighter, but given how smooth and gooey the rest of it is, I don’t mind that it has some substance. All-in-all it’s smooth and sugary sweet.

RECIPE

Dulce de Leche Cupcakes (recipe from Confections of a Foodie Bride)

Cupcakes:

  • 1 can homemade dulce de leche (14 oz, if buying ready-made)
  • 2 sticks butter, at room temp
  • 1 1/3 cup sugar
  • 4 eggs
  • 2 tsp vanilla
  • 3 cups flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup buttermilk

Frosting:

  • 4 egg whites
  • 1 1/4 cup sugar
  • 3 sticks unsalted butter, cubed and at room temp
  • 1/3 cup dulce de leche
